Founded in the eighth year of the Meiji era, the beef merchant Tajimaya continues to dedicate itself to the breeding of Kuroge Wagyu and Tannou (purebred cattle). This 1,300-year-old tradition and lineage, passed down only in the narrow mountainous regions of northern Hyogo Prefecture, is sustained by unique water and grass from the distinctive climate. Livestock farmers who live with the cows they use for food and raise them using their own techniques create beef that transforms into a culinary masterpiece, embodying the ultimate dedication to the true essence of beef.
